Responsabilidades
- Melakukan proses uji coba (food trial) hingga menemukan standar rasa, tekstur, tampilan, dan costing yang ideal.
- Menyusun Standard Recipe (SR), Standard Portion, dan SOP produksi untuk setiap menu baru.
- Menganalisis dan menghitung food cost, yield, dan portion control untuk memastikan menu profitable.
